Picadillo


Yummy and Easy Picadillo


Ingredients
2 lbs ground beef
l large onion
1/4 of a green pepper
1 cup diced celery (about 1/4" thick)
6 cloves garlic peeled
1 bunch cilantro
2 large potatoes
3 TBS salad olives*
1 TBS capers*
2 TBS olive oil
Salt to taste (I start with 1 tsp)
Black pepper to taste ( I start with 1/2 tsp ground black pepper)
3 TBS tomatoe paste

Equipment
Cutting board
Food processor
knife
Fine wire colander to drain meat
Slotted spoon
Large skillet

Peel and cube potatoes into approximately 1 inch size.  Take onion, green pepper, garlic, cilantro and pulse several times in food processor until ingredients are very finely diced.  Brown the ground beef  evenly over moderately high heat.  Drain the meat once it is brown.  Remove to separate bowl.  Wipe off skillet and add olive oil.  Add ingredients from food processor. Add celery. Saute for approximately 2-3 minutes over medium heat.  Stir several times, being careful ingredients do not burn.  Add tomatoe paste.  Add ground meat. and diced potatoes.  Add olives and capers. Season with salt and pepper.  Add 1/2 cup water.  Cover and cook over low heat until potatoes are cooked through.  Serve with white rice and a nice tossed salad. Simple and YUMMY!

*If you can find Goya Alcaparrado Manzanilla where you are use this instead.  It is what I prefer.  But I find it hard to come by where I live.  So I use the Goya salad olives and capers sold in separate bottles.
