Tehillim (Psalms) 9:5



ADONAI is a stronghold for the oppressed,

a tower of strength in times of trouble.

Those who know your name put their trust in you,

for you have not abandoned those who seek you, ADONAI.

Challah Recipe

Wet Ingredients
2 eggs + 1 egg yolk
1 egg for egg wash
1/4 cup oil
1 cup warm water
1 TBS oil

Dry Ingredients
1/2 cup + 1 TBS Sugar
1/2 tsp salt
4 cups bread flour
(have available additional 1/2 - 1 cup bread flour)
2 1/4 tsp fast rise yeast
Sesame or Poppy Seeds (optional)

Equipment
Standmixer
Hook Attachment
1 large bowl
Moistened kitchen towel
Pastry Brush

Except for the water, all ingredients should be at room temperature
Place dry ingredients into bowl of standmixer.
Mix at low speed and as mixing
Add oil
Add 1 cup warm water
Add 2 eggs + 1 egg yolk

Add additional flour a little at a time until dough forms around hook and away from walls of bowl.
Continue mixing (kneading) until dough is not sticky.
Turn dough out onto clean kitchen counter that you have lightly dusted with flour.
Knead dough for additional few minutes until dough is smooth.
Shape dough into round ball.
Take the 1 TBS oil put into large bowl. 
Place dough in bowl and cover with moistened kitchen towel.
Place in warm spot in your kitchen or in oven with the oven light on.
Let rise 1 hour then punch down, reshape, cover with remoistened kitchen towel. Do this 2-3 times.
After final rise.  Punch down.  Knead dough for about 1 minute.  Divide dough in half. 
Divide each half into equal parts for 3, 4, or 6 strand Challah.
Braid as desired.
Mix egg for egg wash.  Brush braided dough with egg wash.  Sprinkle sesame seeds or poppy seeds as desired.  Or sprinkle a little kosher salt.

Bake in 350 oven for 1/2 hour or until bread sounds hollow when tapped.

What Can Happen If You Multi-task When Baking Bread

you pick the wrong bowl and get mushroom dough

but punching it down makes it fun!

you forget the bread is rising and end up with misshapen, somewhat deformed, bread but

it still tasted YUMMY!
